Ingredients

  • 300g dark chocolate (at least 70%)
  • 3 tbsp caster sugar
  • 75g unsalted butter
  • 9 egg whites
  • 4 egg yolks

This recipe is from our friends the Poggios. We first ate it at their house and when they came to dinner we insisted they brought chocolate mousse with them.

It is extremely chocolately.

Instructions

  1. Separate the eggs so you have the 9 whites in one bowl and the 4 yolks in the other
  2. Whisk the whites with a pinch of salt until you are able to hold the bowl upside down without them falling out
  3. Add the sugar to the yolks and whisk
  4. Put the chocolate broken into pieces and the butter in a heat resistant container and heat in a ‘bain marie’ until it is smooth (not a single drop of water should enter the container, or everything is ruined !)
  5. Stir briskly with the sugar and the yolks
  6. Mix gently the whites with this mixture using a big wooden spoon until it is smooth
  7. Put in the fridge for at least 8 hours
